烹饪要点
冷冻的鸡常常有一股怪味,烧煮前将其用姜汁拌匀并腌渍5分钟,不但能去除掉怪味,而且可以使鸡肉的味道更加鲜美。
鸡胸肉切丝

祖国医学认为,鸭肉味甘、性寒,有益阴、养胃、补肾、除虚弱、消肿、止咳化痰的作用。老人、儿童常常阴虚,故应常吃点鸭肉。
烹饪要点
炖老鸭时为了熟烂得快,可把几只螺蛳与老鸭同煮,这样任何陈年老鸭也会炖得熟烂;另外可取猪胰切碎,与老鸭同煮,肉易烂且汤汁鲜美。
鸭肠的清洗
